Kale & Kielbasa Soup Lately, I've been making some yummy green drinks which my two year old son really seems to enjoy. Crazy, right? Well, today I decided I needed to use more of my kale - this time, in a soup. Ingredients: 2 handfuls of kale 1 pinch of salt 1 small white onion 1 garlic clove 1 tbsp olive oil 3/4 of 14 oz kielbasa sausage (use all if meatier soup is desired) 5 cups of chicken broth (use a tad more if you feel it needs to be soupier or if you use more kielbasa) 1 can (rinsed & drained) cannellini beans 1 cup small pasta (small elbow or shells) Lemon Start off by blanching the kale with a pinch of salt. Then I poured cold water on it to stop the cooking. (It can finish softening in the soup - the blanching keeps your soup from being green). Next, put olive oil in stock pot, add diced onion and sliced kielbasa until onion is translucent. Add minced garlic. After a few minutes, add the chicken broth. When it begins to boil, add the kale, beans
