Mission accomplished: 30 Bikram classes in 30 days!

I did it, 30 Bikram yoga classes in 30 days! How amazing is that! Why is the picture foggy?? It's the sweat

 My Bikram 30-day challenge began as an investigation. I have been curious for a long time, hearing this and that of how wonderful it is, body changing, life changing, etc. My investigation began with a curious seed that grew to a love and appreciation for Bikram yoga. I'm not sure what I expected exactly. I was excited to be "working out" daily, but didn't realize the mental aspects I would also gain. Physically it's nice to go into class and know what you're going to get. I know I am going to get a great workout. I know I'm also gong to stretch and cleanse my body like the dickens! I have loved the physical perks that came with this challenge. I lost weight, even inches, and feel and look more tone. I feel super healthy, strong and flexible long after class is over. I am more conscious of what I put in my body because of the sick feelings that arise in class when I eat a little off. I have noticed a reduction of pain and stiffness in a injury I have been nursing. And Bikram yoga is ALL I have been doing!

Mentally it's nice to go into class and know what you're going to get. Because of this, you can mentally prepare your mind for the next 90 minutes. Even if it happens to be a harder class than you thought, whether it be because of sickness and/or extra fatigue, you know you can push past that and will be benefited for doing so. There were times I wanted to lay down the whole time. I had to put my mind out of it and take a pose at a time; pushing past my boundaries my head had set up to disrupt what my body needed. Sometimes these classes would be my best. I wouldn't even think about getting into a pose, I would just go for it. Then I would lengthen and extend the pose longer than I thought, repeat it on the other side and feel my victory after. Don't get me wrong, I had days I sat poses out, but learned to not let that keep me down. I would feel so amazing after these extra difficult classes. Although I felt exhausted, I also felt happy that I exceeded my preexisting doubts. What a wonderful tool to take with you into life. Doing what you should be doing, pushing past the "can'ts" and seeing you CAN succeed, AND redefining what succeed means. Perfect? That definition changes daily.

Thanks everyone at SLC Bikram yoga for your amazing support; particularly Greg and Becky for giving me this opportunity to see what this 30 day challenge is all about. If you have ever thought about doing the Bikram 30 day challenge, do it! There WILL be ups and downs. But in the end you will look back with satisfaction, knowing you endured your best, and did something perhaps you thought you couldn't.

awesome job! i'm inspired! you're a rock star. i've been couponing for 16 months now and just recently i've been focusing on not buying junk food just because i can get it for free or almost. i'm more aware of what i'm putting into my body. i stopped at my local natural foods grocery store today. now i need to get on the yoga band wagon.

Congrats on your hard work. What an accomplishment. I love how you segue way into the ice cream. I have so little self discipline, I can't focus on the exercise and ignore those tempting treats. I really admire you for sticking with it.

What to do with Apricots: Homemade Fruit Leather

If you have access to an apricot tree I highly suggest making fruit leather.  This was my first time attempting any kind of dried fruit and it turned out heavenly!

Apricot Fruit Leather

4 cups chopped apricots
lemon juice
1/2 c water

Add apricots and a 1/2 c of water to a saucepan on low heat.
Cover, stirring occasionally for 10 minutes.
Add sugar 1 T at a time till it tastes good
Add lemon juice 1 tsp at a time to taste
Add cinnamon to taste
Add nutmeg to taste - I did a lot of tastin'!! :)
Simmer for 5 minutes on low heat until thickened a bit

In batches add mixture to a blender
Blend until smooooooooth
Prepare baking sheet: line with microwaveable safe plastic wrap
Add mixture to sheet about 1/4 inch thick

MAKE SURE the plastic wrap doesn't fold over mixture and that it doesn't touch your oven
Bake at 140 degrees for 8 to 12 hours - fruit leathe…
