Park City is having a EarthWell Festival  the 11h & 12th at the Redstone Center!   It looks like a lot of fun...I'm going. :)  Live music, food, shops, kids stuff, demonstrations...etc.. An Adult ticket is $10 but there are 3 ways to get in for $5 . :) Over 60 and under 12 get in for FREE. Ages 13 - 18 = $2 Have you been to Gilgal Gardens ?  It's awesome... and they are having their 10th Anniversary Celebration on Sunday the 12th from 2 - 6 pm! Admission is FREE Located at 749 East 500 South There will be live music, children activities, and light refreshment.  If you've never been, now would be a good time to check it out.  It's also a great place to be on a Sunday.  :):)  There are over 70 stones engraved with scriptures and 12 original sculptures.  And it's not too big so you won't lose your kids..lol I always worry about that. .

Remember my love affair with garbanzos? It continues. Here is my recipe for my version of Spanish garbanzo stew or "potaje". 2  cans of garbanzos drained and rinsed (15.5 oz cans) 1/2 medium sized tomato 1 roasted red pepper 1/4 bell pepper 2 cloves of garlic 1/2 tsp of smokey paprika 2 bay leaves 1/4 medium onion 2 1/2 baby carrots 2 medium potatoes salt to taste 2 cups of water Cook all ingredients listed above on medium high heat until potatoes are tender. Take out bay leaves and blend all liquid with everything (except most garbanzos and some potatoes). Enjoy! ( ¡ Buen provecho!)     Veronica

This salad is really good.. look at the picture!!  My photog skills are improving right?  The salad glistens.. GLISTENS! I found this recipe in the  Lion House Entertaining  cookbook.  This year we have tomatoes and cucumbers in our garden so I didn't even have to go to the store. :)  3 medium tomatoes 2 cucumbers 1/2 small onion 1 can garbanzo beans dressing: 1/4 c red wine vinegar 1/4 c vegetable oil 2 t sugar 1/2 t salt 1/2 t dried parsley flakes Add all ingredients and pour dressing over it let cool in refrigerator for 1 hour...done!
