So, I can't find tartar sauce at the store to save my life.  I suppose I could have asked somebody.....   Then it occurred to me,  I probably have all the ingredients at home to make it myself!  AND I did!  I decided to look at a few recipes and then create my own.   I'll tell you right now that there have been no food poisoning issues. :):)  In fact it's delicious!  Since it's my own recipe I'm going to name it... Tartar Sauce Merrill (because I created it - Merrill is my last name lol ) 1 c light mayo 2 T sweet relish 2 T lemon juice 1 1/2 chopped onion (I used dried) 1/2 T chives salt & pepper to taste mix it altogether and refrigerate for at least an hour before serving.  It's better after 3 hours. will last in refrigerator for 3 days so don't make a ton. :) Coupons: Vlasic relish .55/1 printable  (will round to $1 at Smith's making it .39!) I think I'm having a love affair with garbanzos.  My husband is from Spain, and my mother-in-law adds them to several dishes.  So, I've ventured to see how I can use garbanzos in my own kitchen. I made the best hummus the other day.  I was so proud of myself.  It was fresh and lemony with a hint of spiciness.  Please let me know if you try it! Yesterday was my husbands birthday.  I had two goals:  1. stay within budget 2. involve my two year old as much as possible Regarding #1   I bought some Ben & Jerry's ice cream , used an oreo pie crust I got from Walgreens months ago, and used cool whip I got for free! I used two of my groupons to buy him gifts (gifts that he wanted even!)  One was from the Nutty Guys, they have great gift boxes!  And the other was from a local bakery.  Who doesn't want bakery goods for their birthday?? I also used swagbucks to take the sting out of an Amazon purchase for him. :)  I would tell you what it was but he doesn't have it yet.  I was a little late ordering. lol Now involving my daughter.... There is so much you can do with zucchini.  I'm having a blast finding new ways to use it.  This way, one never grows tired of it. This week in my adventures in cooking with zucchini, I made: Zucchini bread. The recipe I used had great ratings on  All Recipes  and for good reason.  It is so tasty! Instead of two loaves, I made four mini loaves and one 8x4  inch  loaf.  It was delicious. Walnuts are a perfect in this bread.  The mini loaves were done is just 20 minutes.  Keep the extra zucchini bread in the fridge or freezer or give it away to family and friends! As noted by Audrey recently, it's a good idea to keep extra zucchini already grated and ready to go in the freezer.  I keep 2 cups of zucchini per zip lock bag since the recipe I use for zucchini bread calls for 2 cups exactly.
