Ok Utahns...This is pretty exciting.   The Circus is coming!!!!  and.... I have 4 sets of 4 tickets to giveaway!! You are all in for a treat!  I was able to get my wonderful friend Veronica to start posting with me!!  Be on the look out for some amazing recipes and more "What to do with...." posts.  This week her assignment is Zucchini. :)  (assignment...lol)   I already have more zucchini than I can handle so I'm very excited!    Meet Veronica -  Life has changed quickly for me the last several months.  I worked for years as a professional in human resources, but have taken early retirement for something even more rewarding: I'm a stay at home mom & wife of one adorable baby boy and a dashing husband!   Being at home has allowed me to work on things that before I didn’t have much time for.  Some of those include cooking and baking for my small family and for my loved ones.  I am learning to grow my food storage, be smart about my grocery bill and cook fun, easy meals.   I’m truly excited to become a contributor to Tight Wad In Utah.

Ok....I'm not sure I can truly express to you how fantastic this recipe is.  I will say this.....I would serve this to guests.  And not just run of the mill guests......FANCY guests!!  I'm almost wanting to start sending out invitations. :):)  Mostly so I can receive praise. lol  AND I WOULD. :) I found this recipe from Simply Recipes : (yes, their pictures are better than mine) Apricot Chicken 1 1/2 lb. roughly chopped apricots 1/4 c sugar 2 T cider vinegar 2 pounds skinless chicken breasts salt 1 T butter 3 T olive oil 1 chopped onion 2 c chicken broth or stock 1 T rosemary (I used dried) 1 t cinnamon 2 t tabasco  black pepper Combine apricots with sugar and vinegar and set aside. In large skillet cook chicken in 1 T butter and 1 T olive oil. brown on both sides on medium high heat sprinkle salt set aside add remaining oil to pan and saute onions till brown add chicken broth and lower heat to medium put 2/3 of apricots mixture in blender to make puree add pur

I needed to make dinner the other night so I pulled out my Fix, Freeze, Feast  cookbook and I ended up making 3 dinners!   This turned out being really good so I'm even more glad now that I did. :)  The recipe in the book is actually for 6 dinners.  Below are the directions for 3. Sweet Asian Chicken chicken breasts- about 3 pounds 1/2 c packed brown sugar 1/2 c soy sauce 1/8 c lime juice 1/4 t curry powder 1 1/2 T minced garlic 1 1/8 t crushed red pepper flakes 2 t peanut oil (I used vegetable oil) Rinse, trim, & cut chicken into strips divide into 3 freezer bags combine sugar, soy sauce, lime juice & curry divide and pour mixture over the chicken Add 1/2 T garlic and 1/4 t red pepper to each bag      (pepper adds a kick but my 2 year old loved it) seal and gently shake to combine ingredients label and FREEZE! and BAM!  You got 3 dinners! To Cook: I cut them into smaller strips heat oil in large skillet add chicken, I also added a zucchini f
