I LOVE this recipe.   I found it in a weight watchers cookbook, so it's only 127 cal per serving!

Makes 4 servings -or 2 1/2 if your me :)


1 1/2 T canola oil
1 small onion
1 carrot
1 celery stalk
3/4 t dried thyme
1 pound broccoli florets (about 2 cups)
3 cups chicken broth (I've also used vegetable - can't tell a difference)
1 t lemon juice
1/2 c skim milk
3/4 t salt
1/4 t pepper

Heat oil in large saucepan over medium.
Add onion, carrot, celery, and thyme
Stir occasionally until softened - 5 min.


Add broccoli and broth
Turn up heat to high until it boils, then reduce to medium-low and let simmer - 25 min.
Remove from heat and add lemon juice.
Let cool 10 min.
Transfer to blender - do half at a time


Return to saucepan - make sure to rinse your blender!  It turns into a paste nightmare to clean up!
Add milk, salt, & pepper
Heat through - 5 min.


My 2 year old ate this up!  It's always nice finding something she'll shovel down. :)

Okay, just saw this and had to post it. Starbucks is offering "happy hour"1/2 price frappuccinos from 3-5 p.m. This runs until May 16th.

Never had a frappuccino? You don't know what you're missing! It would certainly make my hour a lot more "happy" to have one! :) I'm a big fan of the Double Chocolatey Chip frap myself. Yummy!

Ebates is a free site that gives you cash back for going through them first. All you do is sign up (all they want is name and email I believe) They'll ask for your address later so they can send you a check!  

Once your signed up you just search for the store you want.  You'll be directed there and then your done...  Just do your normal shopping and how much you spend will be reported back to Ebates, then you'll be credited. They send out checks quarterly! I love it!

I LOVE fries!  I would make them more but it seems like a hassle when I'm trying to get dinner ready, kids are screaming, and I'm trying to dodge cheerios on the floor.

Then along came freezer fries and my life is far richer (lol)....not the ones you buy at the store that kinda look potato-like, but the real things.  They are also MUCH cheaper.   So instead of letting your potatoes sit around, and hoping that you remember to use them, you can make fries....yum....

First wash and scrub potatoes ( I don't peel because I think it's miserable work)
Cut into 1/2 inch fries
Toss with oil (I usually use Canola)
Add salt and a little sugar (makes them crispy)



Place them on a baking sheets and bake at 475 for 20 minutes (they will only be half cooked)
