It was a hit! And they freeze GREAT! It's the best blueberry muffin recipe I've found so far. I just used frozen blueberries from Costco.

1 medium green bell pepper 6 green onions, divided 1 lb lean ground beef 1 can chili beans in sauce, undrained 1 cup chunky salsa 2 tbsp Chipotle rub (or 1 tbsp finely chopped chipotle peppers) 1 pkg corn muffin mix (8.5 oz) 1 container sour cream 1 egg 1/2 c. shredded cheddar cheese (0ptional) 1 tomato, seeded and diced (optional)
Chop bell pepper and thinly slice onions, separating white and light green bottoms from tops. Reserve 1 tbsp of the onion tops for garnish. Place remaining tops in bowl.

THEN the sweet $4 catalina prints!! WAHOO! #2 bought 4 boxes of Raisin Bran $7.88 used (2) $1.50/2 printables I also bought a book of stamps $8.80 = $13.68 Subtract $4.00 = $9.68 THEN a $3 catalina prints!!! Seriously giddy....Im a dork. So taking out the stamps, it works out to be 8 boxes for about $1.93!

Did any of you brave the "Black Friday" crowds at the new Winco stores in Orem and Ogden today? One of our readers, Shelley, reported that in Ogden, she waited in line for 40 minutes for a cart and at least 30 minutes to check out. Was it worth it? You bet!! She also discovered something I didn't - while wandering down the drinks aisle, she found the Capri Sun Sunrise drinks that went with the manufacturer coupon (the ones in the main area were not the Sunrise variety so I assumed they were not included) - and, yes, they could be used with the in-ad coupon, making them free!!! Okay, first let me say that this meatloaf was really quite tasty. That being said, don't serve it with the Rosemary Potatoes here. I guess I was just thinking meatloaf and potatoes go together, right? Not this one. This would be great with some Spanish rice. It is a very "south of the border" flavor.
1 c. green bell pepper 1 medium onion, finely chopped 1/2 c. very finely crushed tortilla chips 1 c. ketchup 2 tbsp chipotle rub (or 2-3 tbsp canned chipotle peppers) 1 1/2 lbs lean ground beef 1 egg 1 1/2 c. shredded sharp cheddar cheese, divided chopped fresh cilantro (optional)
Finely chop pepper and onion. Place chips in large resealable bag and finely crush. Combine ketchup and rub in a small bowl and stir. In large bowl, combine peppers, onions, chips, 3/4 of the ketchup mixture, beef, egg and 1 c. of the cheese. Mix well.
