Winco Grand Opening!

Did everyone get a Winco ad in their mailbox yesterday? They are having their grand opening of their new stores in Orem and Ogden on Monday, May 3rd. If you are planning on visiting either of these stores that day, here is my advice:

*Be prepared to stand in long check out lines
*Be prepared to wait for a shopping cart (seriously, I'm speaking from experience!)
*If you don't already know, they DO NOT accept credit cards, but anything else is fine

When Winco opened here in the Salt Lake Valley, opening day was like Black Friday. I can only assume it will be the same for these two stores.

HOWEVER - Enjoy those in-ad coupons!! There are some great ones! And, you don't have to go to the Orem and Ogden locations to take advantage of them!! I've also found a few you can even pair up with manufacturer coupons to make it an even better deal:

Over Budget for April :(

This was an even month so the goal was $300 on groceries and toiletries.  Failed.  The problem was going to Costco twice this month.  That place has a mystical power over me.  I freak out about being over-charged a quarter, but I have no problem laying $170 down at a Costco counter.  I get the same way in IKEA.  Thankfully it's far away :)

Anyway, this is an odd month so my goal is $200.  So far this year I've been going over every month...lol
Just think what would happen if I didn't have a goal!  Wish me luck!

Tex-Mex Chicken Fingers

I do a freezer swap every month with 4 of my friends.  This way you make something in bulk, but end up with 5 different meals!

This month I'm doing Tex-Mex Chicken Fingers.  I got the recipe from Fix, Freeze, Feast: Prepare in Bulk and Enjoy by the Serving - More than 125 Recipes So far I really love this book.  I made Chicken Curry last month, it was amazing...and EASY.

First I rinsed and trimmed 5 pounds of chicken, then cut into strips (3-4 per breast)
lightly beat 4 eggs

Then I made the bread mixture:  (I scaled the recipe down a bit from the book) 4 cups bread crumbs 2 1/2 T ground cumin 2 1/2 T granulated garlic 1 1/2 T chili powder 3/4 T salt 3/4 T cayenne pepper

Mix dry ingredients together and start an assembly line.   First dip chicken in egg Coat with bread mixture (I had lots of leftover.  Could probably be scaled back even more)

Place on baking sheet (I used pie tins because I have a small freezer :) Cover sheet with plastic wrap and place in freezer until frozen solid When froze…

Fresh Pineapple Salsa

2 plum tomatoes
1/2 small red onion
1 4-in. piece seedless cucumber
1/2 cup lightly packed cilantro leaves (the more, the merrier, I say!)
1 jalapeno pepper
1 medium pineapple
1 lime
1/2 tsp salt

Remove seeds from tomato, then dice into small pieces. Dice onion and cucumber. Chop cilantro. Combine tomato, onion, cucumber and cilantro in medium bowl. Cut jalapeno pepper in half and remove seeds. Finely chop, then add to bowl.

Core and peel pineapple. Dice pineapple into small pieces. Cut lime in half. Juice each half to measure about 2 tbsp of juice. Add pineapple, juice and salt to bowl. Mix thoroughly till combined.

*BEWARE* This stuff is addicting :)

Mega Swag Bucks Day!

Today is Mega Swagbucks day.  I've only got 14 so far :(  Let me know if you do better!

California Club Pizza

1 tsp. vegetable oil
1 pkg. refrigerated pizza crust (or make your own here)
2 c. diced or shredded cooked chicken (use your chicken from here)
2 c. shredded cheddar and Monterey jack cheese
2 plum tomatoes
1/4 medium red onion
1 medium avocado
1 lemon
6 slices bacon, cooked and drained

Preheat oven to 425 degrees. Lightly spray cookie sheet with oil. Spread dough out on bottom of pan. Top crust with chicken and sprinkle with cheese. Bake 16-18 minutes or until crust is golden brown. Remove from oven.
Meanwhile, slice tomatoes in half, scrape out seeds, and dice. Slice onion. Cut avocado in half; scrape out and dice. Place avocado, onion, and tomatoes in medium bowl. Juice lemon to measure 2 tbsp juice; add to bowl and stir.

Distribute tomato mixture evenly over pizza. Sprinkle with bacon, if desired. Cut in squares and serve.(You'll notice from my picture that I only did half with the tomato mixture. My kids weren't too thrilled to try a new recipe, but they act…

Pizza Dough

(I apologize for the dark picture. Not one of my stronger points :) )

1 c. warm water
2 tsp sugar
2 pkgs yeast
2 c. flour
1 tsp salt
dash garlic powder
2 tbsp shortening

Combine water, yeast and sugar. In separate bowl, combine flour, salt, and garlic powder. Add dry ingredients to wet ones. Add shortening. Cover; let rise till doubled in bulk (about 1 hour). Roll out on pizza sheet. Bake at 400 degrees 10 minutes; add toppings and bake additional 10 minutes (or follow baking instructions for recipe given).

I went to Fresh Market to pick up these babies, 10 inch-ers for .89!!  I went to checkout and the price didn't come up so the cashier asked me how much.  I said they were .89, and she said "no, these aren't .89"...then she saw my face, the instant sadness in my eyes, and said...."OH were these on sale?  I need to get some of these!  HA!  Just thought it was funny.  
Im out of freezer burritos again!  So this time I'm making BIG ones :)  We'll see if they last a week this time. :)

Chicken Broth

2 1/2 lbs bony chicken pieces
3 stalks celery with leaves, cut up
2 carrots, cut up
1 large onion, cut up
2 sprigs fresh parsley
1/2 tsp dried thyme, sage or basil
2 bay leaves

In large pot, place chicken pieces, celery, carrots, onion, parsley, thyme, bay leaves, 1 tsp salt, and 1/4 tsp pepper. Add 6 cups cold water. Bring to boiling; reduce heat. Cover and simmer for 2 hours. Remove the chicken.

Strain broth. Discard vegetables and seasonings. If using the broth while hot, skim fat. Or, chill, then lift off fat. Remove meat from the bones and reserve for another use. Store broth and meat in separate containers up to 3 days in the refrigerator, or up to 6 months in the freezer(I like to store in 1 cup containers). Makes about 6 cups of broth and 2 1/2 cups of meat.

Recipe Flop

I had some cubed steak to use, so I thought I'd try a healthier version of chicken fried steak.  It wasn't awful.  I didn't have to choke it down or anything, but it doesn't make the list.  We only post our favorites.  :)

Anyone have a good recipe using cubed steak???
