Corn Tortilla Quiche

First, let me just say that I have never made quiche before.  But even a beginner like me can make magic happen. :)  It was amazing! Corn Tortilla Quiche I followed the recipe pretty closely but I did make a couple substitutions. Instead of sausage, I used bacon (almost a whole package). Instead of whipping cream, I used evaporated milk. And instead of Monterey Jack cheese, I used Mozzarella. I also DOUBLED the recipe. While the bacon was cooking:  I preheated the oven to 350 Greased 2 pie plates-- use a 9-in, if you use an 8-in be sure not to put too much in it.  I learned the hard way and now there's egg in the bottom of my oven :) Arrange tortillas-- four overlapping, 1/2-in beyond rim Then layer, bacon, cheese, chilies, and s l o w l y add egg mixture on top. Then bake for 45 - 55 minutes until center is set.  Sprinkle with cilantro (I used dried) and your done! What to do with a 10 lb. bag of Potatoes

I wrote a post about using a full bag of potatoes!  Seems like I always end up wasting half of a bag, so I found a pretty easy solution.  It's on The Coupon Project .  Another great coupon site! Let me know what you think...  I believe my food pictures are much better in this post!! :)

My Cereal Stock Up Today

This morning, I went to Target and Smith's for, among other things, cereal. Both stores have AWESOME cereal deals this week! I decided to just take a picture of the cereal this time. I have 15 boxes that I purchased today. Total cost? $6 plus tax!!! Nice! Each box was .40. Go here to see how I did the Quaker deal at Smith's. Go here to see how to do the Kellogg's deal at Target. Also, it is being reported that, although the Smith's ad states one $5 off deal per transaction, many people have been able to do multiple sets (10 or 15 boxes) of cereal at a time and the $5 is coming off for each set of 5. Bread Store vs. Grocery Store

I don't usually make my own bread, but I don't like to pay a lot of money for it, either. One of my favorite stores to go to is the bread store. If you've never been to one, you are missing out! Their prices are significantly cheaper than at the grocery store, and I LOVE the clearance shelf - items that are about to hit their stale date and must sell! I usually visit the bread store once every 4-6 weeks and buy 6 loaves of bread at a time (they freeze well). On a recent shopping trip, I decided to price compare and this is what I found: Hostess/Wonder Bread Store (400 S. 700 E.) Hollandaise Sauce

I promised a recipe with egg yolks today, and here it is. Again, something I have never made before but I'm excited to try! My egg yolks are currently sitting in my fridge (they will stay good, covered, for up to 3 days) and waiting to be used. Also, this recipe calls for a double boiler - since I don't have one, I am substituting a sauce pan. 1/2 c. butter 3 beaten egg yolks 1 tbsp water 1 tbsp lemon juicedash saltdash pepper Cut the butter into thirds and bring it to room temperature. In a saucepan, combine egg yolks, water, lemon juice, salt, and pepper. Add a piece of the butter. Cook, on low heat, stirring rapidly with a whisk, till butter melts and sauce begins to thicken. Add the remaining butter, a piece at a time, stirring constantly till melted. Continue to cook and stir till sauce thickens (about 2 more minutes). Immediately remove from heat. If sauce is too thick or curdles, immediately whisk in 1 to 2 tablespoons hot water. Serve with cooked veget

S&W Beans at Smiths for 34 cents!

Strawberry Shortcake

Still have lots of strawberries left? How about a great low-fat dessert? I think most times when we have Strawberry Shortcake, we have the whipped cream and the strawberries, but just buy the angel food cake at the store. Well, today I decided to try my hand at making my own angel food cake. Why not? (Besides, if many of you are like me. . .a couple of weeks ago eggs were on sale for .88 at Fresh Market and I STOCKED UP!! So, I have a plethera of eggs in my fridge and this certainly calls for them!) 1 1/2 c. egg whites (10-12 large) 1 1/2 c sifted powdered sugar 1 c. sifted cake flour or all-purpose flour 1 1/2 tsp cream of tartar 1 tsp vanilla 1 c. granulated sugar In an extra large mixing bowl, let egg whites sit at room temperature for about 30 minutes. Meanwhile, sift the powdered sugar and flour together 3 times and set aside. Add cream of tartar and vanilla to egg whites and beat with an electric mixer on medium speed until soft peaks form.
