Slow Cooker Bacon-Potato Soup

6 c. diced potatoes 5 c. water 2 c. chopped onions (or less, depending on how much you like onion :)) 4 c. chicken bouillon cubes 6 slices bacon, cooked and crumbled 1 can evaporated milk 2 c. grated cheddar cheese Combine potatoes, water, onions and bouillon cubes in 5-7 quart slow cooker. Cover and cook on low heat 6-8 hours or until potatoes are tender. Stir in bacon, cheese, and milk. Cover and cook additional 20 minutes or until cheese is melted. I found this recipe in a book called 101 More Things to Do With a Slow Cooker . It makes about 10-12 servings of soup, but it is very good. Winco Potatoes - .58!!! Cheeseburger Soup

1/2 lb. ground beef 3/4 c. chopped onion 1 c. diced celery 3/4 c. carrots 1 tsp dried basil 1 1/2 c. milk 1/2 tsp pepper 8 oz American processed cheese (or shredded cheddar cheese) 1/4 c. flour 4 tbsp butter 3 c. chicken broth 4 c. diced potatoes 1 tsp parsley 3/4 tsp salt 1/4 c. sour cream, optional Brown beef and drain. Saute onions, carrots, celery, basil, and parsley in 1 tbsp butter until tender for 10 minutes. Add broth, potatoes, and beef. Bring to a boil and reduce heat. Cover and simmer for 10-12 minutes or until potatoes are tender. In a small skillet, melt remaining 3 tbsp of butter. Add flour. Cook and stir for 3-5 minutes or until bubbly. Add to soup. Bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt, and pepper. Cook until cheese melts. Blend in sour cream, if desired, before serving. Winco Potatoes - .58!!! Peanut Butter Bars

Peanut Butter Bars This is my new favorite dessert.  They freeze well, but never make it into my freezer.  They also require NO BAKING!  I would have shown more pictures but these are super easy to make. (good picture right??  Im working on it :)

Free Offers I've Tested

Swagbucks - Probably my favorite.  It's a search engine like Google, but you get 10-30 Swagbucks a day when you search.  I go back and forth with the Swagbucks toolbar and Google.  An Amazon gift card is 450 swagbucks, takes about a month to earn doing what you would do anyway online.  I love it!  I wait until I earn $25 worth of Amazon gift cards so that I don't have to pay shipping :)  Go here to see what I got a few weeks ago.  OH and today is Mega Swagbucks Friday, they give out more today.  I've earned 100 before! Easy Scalloped Potatoes

I made Scalloped Potatoes last night.  The missing section there is what I "tested" to make sure it was done...lol.  These were SO good!!!  If you need a recipe to use with all those potatoes you bought, I wholeheartedly recommend this one!!  I also heard from a reader that these freeze well!  I was going to test that, but lets face it, these are going to be digested. :)   Here is the link to the recipe, but I changed it a little... I didn't boil the potatoes, instead I sliced them thinly and put them in a 9x13 dish.  I put a layer of potatoes, then the sauce, topped with cheese, then I did it again.  I baked at 350 for 1 hour and 10 minutes.   I didn't change the ingredients except that I didn't add onion, but only because I didn't want to go to the store.  Winco Potatoes 10 lb bag $0.68 (but Kori said they were .58 yesterday!) Strawberry Jam

2 quarts strawberries 1 pkg powdered pectin 1/4 c. lemon juice 7 c. sugar Wash and crush the strawberries. Combine strawberries, pectin and lemon juice in large saucepot. Bring to a boil, stirring occasionally. Add sugar, stirring until dissolved. Return to a rolling boil and boil hard, 1 minute, stirring constantly. Remove from heat and skim foam, if necessary. Ladle jam into hot jars leaving 1/4 inch headspace. Adjust 2 piece caps and process 10 minutes (20 minutes in Utah) in a boiling water canner. Yields about 8 half pints. Never canned before? It's really not as scary as it sounds. If you have any questions, let me know, I'm happy to help! :)

My Trip to Winco

Here is my trip to Winco today. While it doesn't represent a huge percentage of savings (only about 29%), I think that is all relative to the store you are at sometimes. Winco, like Walmart, generally has the lowest price around, so there are no additional discounts for sales to factor into a percentage. This being said, I bought 44 items and paid $49.00, using $20 in coupons . That's an average of almost $1 per item. You may have noticed some posts say that they have been posted by Kori .  She is my long time friend from college with an abundance of recipe and coupon smarts.  Yeah!  She is also the one who got me started with couponing and has helped me save over $300 a month because of it! Frozen Blueberry Pancakes

Maybe this is a no-brainer for most people, but this is my first time freezing pancakes.  This is how I did it... Cool pancakes completely Cut squares of wax paper Put piece of wax paper in between each pancake. Seal in freezer bag This way you can take one out at a time! Loaded Baked Potato Chowder

Have you seen all the great potato deals this week?? Here is a recipe that I enjoy and is perfect for those snowy days (like today!). 3 large baking potatoes 3 1/2 cups milk, divided 4 oz cream cheese, softened 2 tbsp butter 2-3 green onions, sliced 4 oz sharp cheddar cheese, grated 1 1/2 tsp salt 1/2 tsp black pepper Optional toppings (chopped cooked bacon, sour cream, steamed broccoli florets) Slice potatoes in half lengthwise. Place in microwavable baking dish. Pour 1/2 cup of the milk over the potatoes. Microwave, covered, on high 11 minutes. Removed from microwave. Move center potatoes to ends of dish, and outer potatoes to center. Cover; microwave on high 8-11 minutes or until potatoes are easily pierced with a fork. Remove from microwave. Coarsley mash potatoes. Meanwhile, whisk cream cheese until smooth. Slowly add remaining 3 cups milk, whisking until smooth. Add cream cheese mixture and butter to potatoes. However, since they came to Utah last fall, this is the 3rd time I have seen an ad put in the mail from them, with some high value coupons. I always try to make a special trip out there just for these ads. 10 lbs of Potatoes for .65!!!

UPDATE: It's been brought to my attention that not all Walmart's in the valley have these prices. I went to the Walmart on 9th East and 4700 South. The Walmart on 1300 S. had potatoes for $1.00 and strawberries for $1.50. Please let us know if you shop a different location and what their prices are. It seems Walmart may be giving Winco a run for their money this week. I just got back from a quick trip to Walmart and noticed not only 10 lb bags of potatoes for .65 , but also s trawberries for .75!!! Winco's ad (which many of us got in our mail last week), showed their 10 lb bag of potatoes for .68 (limit 1), and strawberries for .98. I will post all the Winco deals in another post. All are EXCELLENT deals!! Where will you be shopping this week???

Chicken Salad Sandwiches

This is my favorite Chicken Salad recipe from the Lion House Entertaining Cookbook.  Awesome cookbook!!  Im not much of an entertainer so this helps me :) 2 cups shredded chicken (or cubed) 3/4 c diced celery 1/4 t salt 1 c grapes (I used diced apples) 4 ounces cashews (I used chopped almonds) 1 16 ounce can of chunk or crushed pineapple, drained 1 c whipped topping 1/2 c mayonnaise 1 t lemon juice 12 6-inch pita breads, halved (I used sandwich thins) Combine chicken, celery, salt, grapes, pineapple and nuts in a bowl.  In smaller bowl mix whipped topping, mayonnaise and lemon juice.  Mix altogether and spoon into bread. I've tried many chicken salad recipes and this is the only one that sticks around, plus most of the ingredients we always have in the house...except for the whipped topping.
