Chicken Curry - Freezer Meal

I took advantage of the Fresh market sale and bought 12lbs of chicken for $16! Last night I made Chicken Curry from the "Fix, Freeze, Feast" book that I got free by using Swagbucks ! Here's the recipe: About 6 pounds boneless, chicken half-breasts 1 cup butter 2 cups chopped onion 1/4 cup curry powder 2 T minced ginger (I used ground ginger) 2 T minced garlic 2 T sugar 2 T Chicken bouillon (I only used 2 squares) 2 t salt 1 cup flour 4 cups water 4 cups milk 2 T lemon juice 3 one-gallon freezer bags (I used 6 quart bags plus we had one meal for dinner last night) GOOD! Cut chicken into bite size pieces Cook over med. heat about 30 min. Remove from heat and cool Divide into freezer bags While chicken cools melt butter in large saucepan over med heat Add onions, cook until soft 5 min. Add curry, ginger, garlic, sugar, bouillon, and salt Cook stirring for 2 min Add flour, cook, stirring 2 min more Mixture will be a paste Gradually add water a

Kroger spices, seasonings, food coloring and extracts are on sale for 40% off. I bought some curry today for $2.15 and Almond extract for $2.39. (we will try to post when we see deals come up on staples)

Picnic Supplies

For the next several days, my menu is focused on picnic items. It is spring break for us, and we have decided to get away!!! And, although we are paying for a hotel room (choke, choke!!!), we can at least spend a lot less on our food. Pasta, Pasta, Pasta

Is your food storage starting to look like this? This is the pasta I've accumulated over the last 2 weeks doing the Smith's March Madness Sale . There are 8 boxes of Ronzoni Smart Taste, 2 boxes of Ronzoni Healthy Harvest, and 10 packages of American Beauty pasta. The beauty of all this? I paid a grand total of $5.40 for all of this! To see how I did it, click here . Now that I have all this pasta, what am I going to do with it? Well, having small children, spaghetti is a HUGE staple in our house. However, there are also some other great things you can do with spaghetti noodles. One recipe that we have loved is called String Pie. The recipe is as follows: 1 lb ground beef 8 oz pkg spaghetti noodles, cooked and drained 2 eggs, beaten 1 c. cottage cheese 1/2 c. chopped onion 1 jar (15 oz) spaghetti sauce 1/3 c. grated parmesan cheese 2 tbsp melted butter 1/2 c. mozzarella cheese Brown beef and onion. Drain fat. Add jar of spaghetti sauce. Mix well and simmer. C

Honey Curried Chicken

Honey Curried Chicken This was also a very easy, very GOOD chicken recipe. I used Gold n' Plump split chicken breasts with ribs ( $1.00 at Fresh Market ).  I halved the recipe because I didn't have a cup of honey :)  I also used fresh mushrooms.  Just tossed them with the sauce, dumped it over the chicken, and then baked it at 400 for about 50-60 min. (I flipped the chicken after a half hour.)  For more clear instructions you can click on the link. Again, my food photography isn't the best, but I promise it was good! :)

Pillsbury Grands Catalina at Smith's

There are some great Catalina's at Smith's this week that match up nicely with some sales. If you don't know what a Catalina is, it is coupon that is printed out at the register good towards your next visit. The one I'm excited about is the Pillsbury Grands Catalina offer. Crumb Coated Chicken Thighs

I made Crumb Coated Chicken Thighs last night and they were AMAZING!  Especially considering how little work was involved. I bought the thighs at Fresh Market yesterday for $1.00 ! All you do is add the ingredients into a ziplock bag You can even double the recipe, make 2 bags and save the other one for another day. :) Then just coat the chicken and bake!  Seriously REALLY GOOD!  I was surprised actually, as was my husband, which is a little insulting... :)
