French Onion Soup


Yesterday was a nice winter-like day.  I was out and about and started craving French Onion Soup.  So I made it for dinner!
Ingredients
  • 2 onions, thinly sliced
  • 1/4 cup butter
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 3/4 cups beef broth
  • 2 1/2 cups water
  • 1 tablespoon garlic salt
  • 1 shot of Sherry (cooking wine)
  • 12 slices French baguette bread, toasted
  • 1/2 cup grated Parmesan cheese
  • 12 slices provolone

Directions

  1. Separate sliced onion into single rings.
  2. In a medium sauce pan saute onions in butter until soft, approximately 20 minutes. 
  3. Stir in flour and gradually add broth and water. Bring to a boil and simmer for 20 minutes.
  4. Meanwhile, toast French bread slices.(I used a regular toaster)
  5. Place 2 toasted bread slices into each soup bowl. Pour soup mixture over bread and sprinkle with Parmesan and 2 slices Provolone cheese. Since I don't have oven safe soup bowls, I put each soup bowl in the microwave for a quick 30 seconds...just enough to melt the cheese.
 This makes approximately 6 servings.

It's DELICIOUS.  I LOVE IT and hope that if you try it, you'll like it, too!
