Yesterday was a nice winter-like day. I was out and about and started craving French Onion Soup. So I made it for dinner!
- 2 onions, thinly sliced
- 1/4 cup butter
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 2 3/4 cups beef broth
- 2 1/2 cups water
- 1 tablespoon garlic salt
- 1 shot of Sherry (cooking wine)
- 12 slices French baguette bread, toasted
- 1/2 cup grated Parmesan cheese
- 12 slices provolone
Directions
- Separate sliced onion into single rings.
- In a medium sauce pan saute onions in butter until soft, approximately 20 minutes.
- Stir in flour and gradually add broth and water. Bring to a boil and simmer for 20 minutes.
- Meanwhile, toast French bread slices.(I used a regular toaster)
- Place 2 toasted bread slices into each soup bowl. Pour soup mixture over bread and sprinkle with Parmesan and 2 slices Provolone cheese. Since I don't have oven safe soup bowls, I put each soup bowl in the microwave for a quick 30 seconds...just enough to melt the cheese.
It's DELICIOUS. I LOVE IT and hope that if you try it, you'll like it, too!
