Tomato Cucumber Salad


This salad is really good.. look at the picture!!  My photog skills are improving right?  The salad glistens.. GLISTENS!

I found this recipe in the Lion House Entertaining cookbook.  This year we have tomatoes and cucumbers in our garden so I didn't even have to go to the store. :) 

3 medium tomatoes
2 cucumbers
1/2 small onion
1 can garbanzo beans

dressing:
1/4 c red wine vinegar
1/4 c vegetable oil
2 t sugar
1/2 t salt
1/2 t dried parsley flakes

Add all ingredients and pour dressing over it
let cool in refrigerator for 1 hour...done!

Last year I had tons of zuchinni and tomatoes (go figure) in my garden and found a recipe on allrecipes.com for a zuchinni tomatoe salad. It is very similar to this one. Just slice the zuchinni raw like you would the cucumber (but you don't need to peel it) it was really delicious. I took it to a work potluck and they loved it. Just trying to help you use up your zuchinni too! lol
