Recipe: Taco Soup


The other day I created my own Taco Soup recipe!  It was delicious and easy to make!

1/2 of a large onion (diced)
1/2 of a medium bell pepper (diced)
2 Tbsp oil
1 pound of ground beef
1 pkg Taco Seasoning (Old El Paso)
1 can kidney beans (drained and rinsed)
I can garbanzo beans (drained and rinsed)
1 can pinto beans (drained and rinsed)
1 28 oz can of diced tomatoes
Dash of garlic salt
2 cups of water

Top with:
Grated cheese (colby, cheddar or whatever you prefer)
A dollop of sour cream
Avocado slices

First heat up oil in a pot. Once hot, add onion and bell pepper until onion is translucent.  Add ground beef and taco seasoning until beef is thoroughly cooked.  Add the remainder of the ingredients and bring to a boil.  Once plated, add cheese, sour cream and avocado slices.  Enjoy with a side of tortilla chips if you desire.  To enjoy with less calories, leave out the sour cream, cheese and chips :)
