Peach Chicken Salad


This salad is SOOO good!!  I got a bunch of peaches from my sister in law's beautiful tree so I've been trying to find ways to use them all.  If you don't have access to a tree, this is the time of year when peaches are on sale! :)

Peach Chicken Salad
3 medium fresh peaches
2 cups cubed cooked chicken
1 medium cucumber
1 slice red onion - finely chopped
Lettuce

Mint Vinaigrette
1/4 c white wine vinegar
1 T lemon juice
1/3 c sugar
1T crushed dried mint (this was in my spice rack.. had no idea it was there.)
1/4 t salt
1/8 t pepper
-you can of course use fresh mint, use 1/4 c, blend all vinaigrette ingredients in blender.


Combine peaches, chicken, cucumber, and onion - set aside
Combine vinaigrette ingredients and pour over peach mixture
Cover and chill.

When your ready to eat use a slotted spoon and pour over lettuce.


I LOVE this way of making a salad.  The lettuce doesn't get all soggy if you want to save some for later!!  I can't believe it's taken me this long to realize this!!  This is now a new favorite fall recipe.  You can see more favorites at Life As Mom.

I have carried my little boy in a baby carrier since he was born. I love the convenience of strapping him in and not worrying about the hassle of a bulky stroller.
