EASY Freezer Asian Chicken

I needed to make dinner the other night so I pulled out my Fix, Freeze, Feast cookbook and I ended up making 3 dinners!   This turned out being really good so I'm even more glad now that I did. :)  The recipe in the book is actually for 6 dinners.  Below are the directions for 3.


Sweet Asian Chicken

chicken breasts- about 3 pounds
1/2 c packed brown sugar

1/2 c soy sauce
1/8 c lime juice
1/4 t curry powder
1 1/2 T minced garlic
1 1/8 t crushed red pepper flakes
2 t peanut oil (I used vegetable oil)

Rinse, trim, & cut chicken into strips
divide into 3 freezer bags
combine sugar, soy sauce, lime juice & curry
divide and pour mixture over the chicken



Add 1/2 T garlic and 1/4 t red pepper to each bag
    (pepper adds a kick but my 2 year old loved it)
seal and gently shake to combine ingredients
label and FREEZE!


and BAM!  You got 3 dinners!

To Cook:
I cut them into smaller strips
heat oil in large skillet
add chicken, I also added a zucchini from our garden :)
stir-fry for 20 - 25 min
serve with rice or noodles.  I stir-fried the chicken and zucchini with Udon noodles and it was excellent!
