Best Granola I've made yet!!


This was REALLY good!  And the magical ingredient is shredded coconut!  I always thought coconut was pricey, but I found a bag at Smith's on sale for 79 cents!  It was regularly .99 so no biggie.

Cinnamon Raisin Granola (I changed a couple things)

4 cups old-fashioned oats
1 c shredded coconut
1/4 c packed brown sugar
1/4 c vegetable oil
1/4 c honey
1 t ground cinnamon
1 1/2 vanilla
1 c raisins
chopped almonds to taste
In a large bowl combine coconut and oats
In saucepan bring to boil: honey, brown sugar, oil, & cinnamon
remove from heat and stir in vanilla
pour over oats and stir
spray baking sheet with cooking spray
spread out mixture


Bake at 350 for 15 - 20 min, stirring occasionally
cool and add raisins
store in an air tight container

This batch I made is already gone, there might be a bowl's worth left.  I'm gonna have to fight for it around here!

Mmmmm... I make one that is very similar and eat some every night! I love it and my husband thinks it hurts his teeth- so I get it all to myself! :)

I've tasted this famous granola...and I can vouch for its tastiness. I'm gonna try to make it - and hopefully it will come out just as good.

YUM!  I used a seasoning packet to make a Chimichurri Burrito Casserole and it was SO good!  I've always liked Lawry's products and I'm excited to try them all!
Also I LOVE skewers!  We had a family get together a couple weeks ago and everyone brought meat and vegetables to put on skewers.  I wish I took pictures because they were so pretty!  :)  As you know from some of my previous food photos...sometimes good food ain't as easy on the eyes..lol  --Burrito casserole was also good lookin'. :)
