Apricot Chicken - Food to Impress with

Ok....I'm not sure I can truly express to you how fantastic this recipe is.  I will say this.....I would serve this to guests.  And not just run of the mill guests......FANCY guests!!  I'm almost wanting to start sending out invitations. :):)  Mostly so I can receive praise. lol  AND I WOULD. :)

I found this recipe from Simply Recipes: (yes, their pictures are better than mine)

Apricot Chicken


1 1/2 lb. roughly chopped apricots
1/4 c sugar
2 T cider vinegar
2 pounds skinless chicken breasts
salt
1 T butter
3 T olive oil
1 chopped onion
2 c chicken broth or stock
1 T rosemary (I used dried)
1 t cinnamon
2 t tabasco 
black pepper


Combine apricots with sugar and vinegar and set aside.



In large skillet cook chicken in 1 T butter and 1 T olive oil.
brown on both sides on medium high heat
sprinkle salt
set aside


add remaining oil to pan and saute onions till brown
add chicken broth and lower heat to medium
put 2/3 of apricots mixture in blender to make puree
add puree to onions & broth
add cinnamon, rosemary and tabasco
simmer 10-20 min - your house will smell GOOOOOD

When your ready to serve add chicken and the rest of the apricots
heat through about 5 min. and serve over rice

AMAZING!!!!!!!  My husband said it was restaurant quality and that it smelled like a spa treatment...lol We actually went out and picked more apricots from our tree so I could make tons more sauce and freeze it.  I want this baby all year. :)
UPDATE: Freezes great!  I froze the sauce only.  Add chicken when your ready to cook.
