What to do with Apricots: Homemade Fruit Leather

If you have access to an apricot tree I highly suggest making fruit leather.  This was my first time attempting any kind of dried fruit and it turned out heavenly!
Plus my house smelled great all day!!  And if you read a recent post you can see why that would be needed...lol

Apricot Fruit Leather

4 cups chopped apricots
sugar
cinnamon
nutmeg
lemon juice
1/2 c water

Add apricots and a 1/2 c of water to a saucepan on low heat.
Cover, stirring occasionally for 10 minutes.
Add sugar 1 T at a time till it tastes good
Add lemon juice 1 tsp at a time to taste
Add cinnamon to taste
Add nutmeg to taste - I did a lot of tastin'!! :)
Simmer for 5 minutes on low heat until thickened a bit

In batches add mixture to a blender
Blend until smooooooooth
Prepare baking sheet: line with microwaveable safe plastic wrap
Add mixture to sheet about 1/4 inch thick

MAKE SURE the plastic wrap doesn't fold over mixture and that it doesn't touch your oven
Bake at 140 degrees for 8 to 12 hours - fruit leather won't be sticky when done
Then roll it up and keep it in an airtight container in the refrigerator.

Just like a fruit roll-up!
I'm really proud of myself with this one.  I shouldn't be because of how easy it was, but it still feels like a triumph. lol

I found this recipe at Simply Recipes.  Check it out if you want to make fruit leather with a different fruit.  Or if you just want to see better pictures. :)

Nice easy recipe! I have a ton a apricots to process right now. I made 10 1/2 pints of Apricot Jam last night, and dried some out. I will make the fruit leather today, I hope it works as well in my dehydrator! Thanks
Wow! You'll be set for a long time! If you go to the Simply Recipes link there were instructions using the dehydrator, if you need it. I need to get me one of those!!

Let me know how it turns out! We were all eating ours up this morning. Don't think one pan will last long. :)

How do you set your oven at 140. The lowest setting on mine is 200. Do you just set to warm?
Cari, I would think warm would do it. Let me know if it works!

GIVEAWAY: ERGObaby Carrier! -CLOSED-

Winner I have carried my little boy in a baby carrier since he was born. I love the convenience of strapping him in and not worrying about the hassle of a bulky stroller. It's also a comfort to hold my little guy close and safe. When I had the chance to review the ERGObaby carrier, I was thrilled to try something that could extend my baby wearing days. My first test was a true one...Costco. I admit that I didn't really look at the directions when I put the carrier on in the parking lot. But I didn't need to! After one look at a picture in the user manual, I strapped my 20 pound boy in, placed my little girl in the shopping cart, and started on my way through the aisles of Costco. I immediately noticed that the carrier more evenly distributed my son's weight than my normal carrier and held my boy high so my legs weren't bumping into his. This made it significantly easier to tote him around the store. Indeed my normal trips to Costco are exhausting. But
