If you have access to an apricot tree I highly suggest making fruit leather. This was my first time attempting any kind of dried fruit and it turned out heavenly!
Plus my house smelled great all day!! And if you read a recent post you can see why that would be needed...lol
Apricot Fruit Leather
4 cups chopped apricots
sugar
cinnamon
nutmeg
lemon juice
1/2 c water
Add apricots and a 1/2 c of water to a saucepan on low heat.
Cover, stirring occasionally for 10 minutes.
Add sugar 1 T at a time till it tastes good
Add lemon juice 1 tsp at a time to taste
Add cinnamon to taste
Add nutmeg to taste - I did a lot of tastin'!! :)
Simmer for 5 minutes on low heat until thickened a bit
In batches add mixture to a blender
Blend until smooooooooth
Prepare baking sheet: line with microwaveable safe plastic wrap
Add mixture to sheet about 1/4 inch thick
MAKE SURE the plastic wrap doesn't fold over mixture and that it doesn't touch your oven
Bake at 140 degrees for 8 to 12 hours - fruit leather won't be sticky when done
Then roll it up and keep it in an airtight container in the refrigerator.
Just like a fruit roll-up!
I'm really proud of myself with this one. I shouldn't be because of how easy it was, but it still feels like a triumph. lol
