Slow Cooker Bacon-Potato Soup

6 c. diced potatoes
5 c. water
2 c. chopped onions (or less, depending on how much you like onion :))
4 c. chicken bouillon cubes
6 slices bacon, cooked and crumbled
1 can evaporated milk
2 c. grated cheddar cheese

Combine potatoes, water, onions and bouillon cubes in 5-7 quart slow cooker. Cover and cook on low heat 6-8 hours or until potatoes are tender. Stir in bacon, cheese, and milk. Cover and cook additional 20 minutes or until cheese is melted.

I found this recipe in a book called 101 More Things to Do With a Slow Cooker. It makes about 10-12 servings of soup, but it is very good.
