MEAL PLAN week one -Challenge-

I have a new challenge this week.  NO grocery shopping (with a $10 exception for milk etc).  It's time to clean out the fridge!!  Sometimes the refrigerator/freezer gets so full of this and that, a lot of it goes to waste because you don't know what you have.  My goal today is to figure out what needs to be eaten and design a meal plan around that.  Ill post what I come up with.

great plan! tonight i'm making calzones using cottage cheese instead of ricotta. i know lynn would roll over in his grave if he were dead - so don't tell. i'm just too cheap and practical to care. plus i have it in the fridge - it was only a buck last week - seemed like a steal. oh, and instead of using spinach i'm using broccoli - leftover from my bountiful basket from a couple weeks ago.

Nice!! Can you share your calzone recipe? ALSO I need your BBQ Pork & Rosemary potato recipe. We had it today and it was amazing!! AMAZING!

My week's menu looks like this, and it's all done with no shopping:
Sunday: Roast, root veggies, salad
Monday: Chorizo/Beef Taco's, Cucumbers and chips/salsa
Tuesday: Chicken w/rice and veggies
Wednesday: Chile Verde/Tortilla salad
Thursday: Meatball/Pasta Bake w/Veggie and Salad
Friday: Freezer Pizza, homemade breadsticks, salad
Sunday: Smoked Turkey and Veggies

I'll check out my freezer and pantry again to see if I can keep going. My goal for March is to just buy Milk/Eggs/Fresh Produce and I'll try to keep it under $50 for the month! Wish Me Luck!

Gardner Village Series: Country Furniture & Gifts

Gardner Village is a local treasure. If you've never found your way down there, October is the month to do it!  The shop owners love Halloween! The village becomes a witch village and many times, shop owners will even dress up.   On my most recent trip to Gardner Village, I stopped in at Country Furniture & Gifts which is a store very ready for Halloween.

The store is located in part of the old restored flour mill built in 1877 by Archibald Gardner in West Jordan, Utah.  The store is very family oriented and houses many built-to-last items such as dining room tables, sofas, beds and chairs.  They are also famous for their rug room where many of their rugs are still USA made. What to do with Apricots: Homemade Fruit Leather

If you have access to an apricot tree I highly suggest making fruit leather.  This was my first time attempting any kind of dried fruit and it turned out heavenly!

Apricot Fruit Leather

4 cups chopped apricots
lemon juice
1/2 c water

Add apricots and a 1/2 c of water to a saucepan on low heat.
Cover, stirring occasionally for 10 minutes.
Add sugar 1 T at a time till it tastes good
Add lemon juice 1 tsp at a time to taste
Add cinnamon to taste
Add nutmeg to taste - I did a lot of tastin'!! :)
Simmer for 5 minutes on low heat until thickened a bit

In batches add mixture to a blender
Blend until smooooooooth
Prepare baking sheet: line with microwaveable safe plastic wrap
Add mixture to sheet about 1/4 inch thick

MAKE SURE the plastic wrap doesn't fold over mixture and that it doesn't touch your oven
Bake at 140 degrees for 8 to 12 hours - fruit leathe…
