MEAL PLAN week one

Baked Teriyaki Chicken recipe
- I like to put the sauce over 1 lb. thawed chicken and let it cook in crockpot on low for 5ish hours. Then put over rice and vegetables

Potato Soup recipe
-I also add a few carrots and in place of half & half I just use what milk I have around.
Bread recipe

Chinese Chicken Salad recipe
- I usually use romaine lettuce and for us its more like 2 or 3 servings...not 9 :)

Glazed Meatloaf

1/4 c. ketchup
2 T brown sugar
1/2 t dry mustard
1 1/2 t lemon juice

1 lb. ground beef
3/4 c. oats
1/2 c. diced onion...or more (i like red)
1 egg
1 cube beef bouilion
1 T lemon juice

Preheat oven to 350
Combine glaze ingredients in small bowl until smooth
in large bowl combine loaf ingredients and 2/3 of glaze
form into loaf or 9x9 pan
brush on glaze

Bake 30-40 min. or 50-60 if you use loaf pan.

OR form loaf into 4 to 6 patties and have an amazing burger!

Gardner Village is a local treasure. If you've never found your way down there, October is the month to do it!  The shop owners love Halloween! The village becomes a witch village and many times, shop owners will even dress up.   On my most recent trip to Gardner Village, I stopped in at Country Furniture & Gifts which is a store very ready for Halloween.

The store is located in part of the old restored flour mill built in 1877 by Archibald Gardner in West Jordan, Utah.  The store is very family oriented and houses many built-to-last items such as dining room tables, sofas, beds and chairs.  They are also famous for their rug room where many of their rugs are still USA made. As they say, "A rug makes a huge impact for a minimum investment to any room."

What to do with Apricots: Homemade Fruit Leather

If you have access to an apricot tree I highly suggest making fruit leather.  This was my first time attempting any kind of dried fruit and it turned out heavenly!

Apricot Fruit Leather

4 cups chopped apricots
lemon juice
1/2 c water

Add apricots and a 1/2 c of water to a saucepan on low heat.
Cover, stirring occasionally for 10 minutes.
Add sugar 1 T at a time till it tastes good
Add lemon juice 1 tsp at a time to taste
Add cinnamon to taste
Add nutmeg to taste - I did a lot of tastin'!! :)
Simmer for 5 minutes on low heat until thickened a bit

In batches add mixture to a blender
Blend until smooooooooth
Prepare baking sheet: line with microwaveable safe plastic wrap
Add mixture to sheet about 1/4 inch thick

MAKE SURE the plastic wrap doesn't fold over mixture and that it doesn't touch your oven
Bake at 140 degrees for 8 to 12 hours - fruit leathe…
